Back by popular demand, and in honor of Shavuot, here is a special cheesecake recipe from Deputy Consul General Gideon Lustig.
Ingredients:
For the Dough:
1 1/2 cups of flour
4 oz. of butter
2 tablespoons of sugar
1 egg yolk
1-2 tablespoons of cold milk
For the Cream:
2 cups of heavy whipped cream
1 cup of sugar
0.5oz of kosher non-flavored gelatin
1/4 cup of hot milk
18oz. of low-fat sour cream
Use a 10-inch cake pan. Use berries for decoration.
Preparing the Dough:
For preparation of the dough, pre-heat the oven to 350 degrees.
Mix all of the ingredients for the dough in a food processor. Place flat onto the surface of the pan. Bake for twenty minutes until it becomes golden brown. Remove from the oven and cool.
Preparing the Cream:
1. Whip the heavy whipped cream with the sugar.
2. Melt the gelatin inside the hot milk. Strain the resulting mix into the sour cream. Layer the prepared whipped cream with the sour cream.
3. Mix all together.
Smear the cream onto the dough, and refrigerate for three hours.
Decorate the cake with berries and it is ready to be served.
